Acqua pazza is a very simple, but delicious Neapolitan inspired dish. The most simplified recipe only requires tomatoes, white wine, garlic and Italian parsley.
You can add a little change in your meal variety by trying this recipe.
Ingredients (Serving for 2 people)
Salmon ... 2 slices
Tomatoes ... 6 small ones
Clams ... 200 g
White wine ... 2 Tbsp
Garlic ... 1 piece
Water ... 100 ml
Italian Parsley ... Amount preferable
Olive oil ... 1 Tbsp
Salt ... Amount preferable
Black pepper ... Amount preferable
Sprinkle salt over the raw salmon and let it sit for 5 minutes. While waiting remove the tomato calyx and mince the garlic.
Put olive oil in frying pan and fry the garlic on low heat until you can smell it. Place the salmon in the frying pan with the skin facing down first and fry both sides.
put the tomatoes, clams, white wine, garlic, water and place the lid closed. Once the clams open up add salt and black pepper. After you place the meal into the bowl place the teared off parsley on top.
